Holon Bay cooks on Derech Ben Gurion, a few minutes from Holon. The fire is olive wood. The fish is bought from boats that land the same morning. Forty-six seats face west.

If a boat is late, that fish is not on the board. Herbs come from a plot behind the oven. Salt is finished on the plate. We do not freeze a backup portion overnight to protect a printed menu.
Holon sits just inland. The kitchen exists so the neighborhood can eat this light without driving up to the hotel strip.
